Stuffed Pork Chops with Gorgonzola and Apple
Ingredients:
1 tablespoon butter
1/2 tablespoon dried thyme
1/2 cup chopped Granny Smith apples
ground black pepper to taste
1/4 cup Gorgonzola cheese at room temperature, crumbled
2 thick cut pork chops
1/2 teaspoon olive oil
2 cloves garlic
1/4 cup Gorgonzola cheese
3 tablespoons dry sherry
1/8 cup heavy cream
1/2 cup chicken broth
salt and pepper to taste
Prep:
Preheat oven to 375 degrees F (190 degrees C).
To make the apple stuffing: In a saute pan or skillet on medium heat, melt the butter and saute thyme, chopped apples, salt and pepper together until the apples are completely softened; about 15 to 20 minutes.
Place the apple mixture in a bowl and mix in 1/4 cup Gorgonzola cheese. The cheese should liquefy into the stuffing within a couple of minutes.
To prepare the pork chops: Butterfly the pork chops by slicing them parallel to the plane of the chop from the fat side to the bone. Stuff each one with about 2 to 3 tablespoons of the apple mixture.
Bake the chops for about 1 hour. Place the chops on a rack with the two stuffing sides pressed together to hold the stuffing inside the chops.
To make the sauce: Heat the oil in a saute pan or skillet on medium heat, then saute the garlic until transparent, and the cheese until slightly melting. Immediately add the sherry, let cook for a minute until combined, then add the cream and 1/4 cup of the chicken stock, salt and pepper. Stir until well blended. Stir occasionally and reduce the liquid on medium high heat until the sauce begins to toast/caramelize and turn darker brown. Add the remaining 1/4 cup chicken stock, reincorporate the cheese and continue reducing until there is just 1/4 to 1/2 cup of thick liquid remaining.
Pork Chops with Nutty Apple Stuffing

1 medium red pepper, sliced
1 medium onion, chopped, divided
6 boneless pork chops (about 1-1/2 lb.)
1/4 tsp. each: salt and black pepper
1 cup chicken broth
1 medium apple, chopped
1-3/4 cups water
2 Tbsp. margarine
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Pork
1 pkg. (6 oz.) PLANTERS Trail Mix Nuts, Seeds & Raisins
COOK and stir red peppers and half of the onions in large nonstick skillet on medium-high heat until crisp-tender. Season chops with salt and black pepper. Add to vegetables in skillet; cook 5 to 6 min. on each side or until chops are golden brown on both sides. Stir in the broth; cover. Reduce heat to low; simmer 10 to 15 min. or until chops are cooked through.
MEANWHILE, melt margarine in medium saucepan on medium heat. Add remaining onions and the apples; cook 2 to 3 min. or until tender, stirring occasionally. Add the water; bring to boil. Stir in stuffing mix. Remove from heat; stir until well blended. Gently stir in the trail mix.
REMOVE chops, onions and peppers from skillet with a slotted spoon; place on large serving platter. Top with the stuffing mixture.

Easy Pork Chops With Apple Stuffing Bake

4 pork chops, about 3/4 inch thick, I use boneless
1 (6 ounce) box cornbread stuffing mix
1 1/2 cups hot chicken broth
1 cup chopped apples
1/4 cup chopped onions
2 tablespoons chopped parsley (I've also used rosemary)
Heat oven to 350. Season each pork chop with salt and pepper to taste.
Combine stuffing mix, chicken broth, apple, onion and parsley; mix well.
Place half of stuffing mixture in greased 11x7-inch baking dish. Place pork chops on top and spoon remaining stuffing over the chops.
Cover and bake for about 45 minutes.
Pork chops are stuffed with an apple and bacon stuffing then cooked in the skillet.
INGREDIENTS:
6 pork chops, at least 1-inch thick
2 to 4 slices bacon, diced
1/4 cup chopped celery
1/4 cup chopped onion
3 apples, peeled, cored, and diced
1/4 cup sugar
1/2 cup bread crumbs or cracker crumbs

PREPARATION:
Cut a pocket in each of the chops for stuffing. Fry diced bacon until crisp, then add celery and onion; cook until tender. Add diced apples, sprinkle with sugar, then cover and cook slowly until tender and glazed. Add bread crumbs; season with salt, pepper and parsley. Stuff mixture into the pockets in chops. Season chops with salt and pepper and brown on both sides in a hot skillet. Reduce heat, add a few tablespoons of water; cover and let cook slowly until done, or about 45 to 60 minutes.

3 tart red apples, cored and halved (optional)
Slowly brown pork on both sides in hot oil. Season to taste with salt and pepper. Place in shallow baking dish. Cover each pork chop with layer of apple stuffing and top with apple half. Sprinkle with sugar. Cover dish tightly with foil. Bake at 350 degrees for 1 hour.
