Start by brining the pork chops - soaking in cold salted water for 3 or more hours (tenderizes the pork and makes it more digestible). Add 5 tablespoons salt to one cup water. Drain wipe dry and start cooking. Then you can brown the chop in some olive oil or vegetable oil. I add soy sauce and a little orange juice cook until the sauce thickens somewhat and serve. Do not undercook pork.

Fast, easy and tasty: Put just a little bit of olive oil into a hot pan. (Barely enough to cover the bottom of the pan.) Add the pork chops and "kiss" them brown on each side. Remove them from the pan. Add about 6-8 ounces of pineapple juice to the pan (be careful, it might spatter a little bit if the pan is still really hot). Use this to de-glaze the pan.
